Fruit Cobbler

3 cups of any kind of fruit drained

1 cup unbleached flour

3/4 Tbs. Rumsford or no aluminum baking powder

3/4 teaspoon sea salt

1 cup of rice milk or 1/2 cup rice milk and 1/2 cup juice from fruit

1/4 cup organic coconut oil

Use Pure Stevia to sweeten  (I use 4 of the tiny scoops that are in the stevia container)

Preheat oven to 350.  While preheating melt coconut oil 8 x8 baking  pan.  

Mix flour, baking powder, and only 2 small scoops of stevia  and salt together for the dry ingredients.

Then mix the rice milk into flour.  You may need to add a little more to get batter to where it

will be very thick but pour.  Take the pan with the melted coconut from the oven and pour the flour

batter directly into oil.  After the flour batter then pour your fruit mixture on top.  Bake for 45 minutes.

or until the mixture is golden brown.
