Easy Banana Bread

Food as Medicine
Bananas have two stomach-protective mechanisms. First, they help the stomach lining to produce a thicker mucus barrier to protect against stomach acids. Second, compounds in bananas called protease inhibitors can help reduce bacteria in the stomach that have been shown to promote ulcers.

Old-Fashioned Baked Pumkin Pie

1 3/4 cups cooked pumpkin(15 0z can)
1 can coconut milk
1/2 cup pitted dates
1/2 cup honey
1/4 cup cornstarch
1 teaspoon vanilla
1/2 teaspoon maple flavoring
1/2 teaspoon coriander or pumpkin pie spice or cinnamon
1/2 teaspoon sea salt
1/2 teaspoon fresh pealed or dry ginger (optional)

Yummy, Quick & Easy Banana/Oat Bars

Nuts and Bolts Squash

1/2 cup dried apricots
1/4 cup cashews
1/4 cup pecans
1/4 cup raisins
1 tablespoon  VegiZest
